Kdo přežije americký koláč
Americké koláče můžete buď milovat, nebo nenávidět. Usuzuji tak z toho, že neznám nikoho, kdo by k nim zaujal nevyhraněný postoj - a v rámci objektivity nutno dodat, že většina mých známých je považuje za jen těžko poživatelné. Jsou prý příliš sladké. Takže jestli jste na sladké, čtěte dál, dozvíte se mimo jiné, jak si takový koláč upéct.
Při cestách po USA se patrně nejčastěji setkáte s koláčem jablkovým nebo citronovým, výjimkou však nejsou ani další ovocné náplně. Kromě koláčů jsou zde k dostání i takřka klasické dorty, které se od těch našich liší jen o poznání sladší a bohatší polevou a náplní.
Americké koláče se oproti těm našim vyznačují několika zvláštnostmi - nejdůležitější z nich je patrně velmi tenký těstový spodek, na kterém jsou položeny všechny ty sladké (nebo, chcete-li, přeslazené) dobroty. Náplň (která ovšem tvoří nejen vnitřek, ale celou horní část koláče - a vzhledem k tloušťce těsta (běžně okolo 5 mm) by se dalo s trochou nadsázky říci, že tvoří koláč celý) přitom může být poměrně homogenní, bez složitého vrstvení nejrůznějších přísad.
A pokud dostanete chuť na pravý americký koláč u nás? Můžete ho zkusit upéci podle následujícího receptu, který popisuje tvorbu jablečného koláče.
Těsto: V míse promíchejte 200 gramů hladké mouky, půl lžíce cukru, špetku soli a 100 gramů másla a zpracujte do drobivého těsta. V hrnku smíchejte půl vejce s půl lžící octa a 30 ml vody. Tuto směs nalijte do těsta a zpracujte v hladké těsto. To rozválejte a vložte do pečící formy tak, aby zakrylo nejen její spodek, ale také stěny.
Náplň: Oloupejte 6-8 jablek (dle velikosti), odstraňte jadřince a nakrájejte na tenké plátky. Ty promíchejte se 100 gramy cukru krystal (u kyselých jablek použijte cukru více), případně s rozinkami, trochou mleté skořice, mletým hřebíčkem apod. Takto vytvořenou směs položte na těsto a přitlačte. Povrch koláče lze posypat drobenkou.
Koláč pečte cca ¾ hodiny v předem zahřáté troubě. Dobrou chuť! (A až pojedete do USA, nenechte si ujít originál!)
